When the zucchini season peaks and „zucchini“ grumbles spread through the family, we offer a solution in the form of tasty zucchini croquettes. These golden balls are crispy on the outside, tender inside and are great as a light dinner or a side dish.

Preparation procedure

  • Preparing the zucchini Wash, dry and grate the zucchini on a coarse grater. Place it in a clean towel or cloth and squeeze out the excess water firmly.
  • Preparing the batter In a bowl, mix the drained zucchini with the eggs, plain flour, 6 tablespoons of breadcrumbs, pressed garlic, marjoram, salt and pepper. The mixture must hold together; if necessary add a tablespoon of flour or breadcrumbs.
  • Shaping the croquettes From the zucchini mixture, shape small balls or cylinders by hand (ball size about 3–4 cm). Coat each in breadcrumbs.
  • Frying Heat oil in a deep pan or pot to 170–180 °C. Fry the croquettes in small batches for 2–3 minutes on each side, until golden and crispy. Remove the cooked ones onto paper towel.
  • Serving Serve immediately, ideally with sour cream, a yogurt dip or a light vegetable salad.

  • Frying: 10 minutes
