Do you love “one-cup” recipes? This bread is exactly for you. You don’t need a scale or a mixer – in the evening just mix the ingredients in one bowl, let it rise and bake in the preheated glass baking dish in the morning. The result: a crispy crust, fragrant crumb and minimal work.

Preparation procedure

  • Evening – mixing Pour the flour, dried yeast, salt and optionally a handful of seeds into a bowl. Pour in the lukewarm water and stir with a spoon just to combine (a loose, sticky dough is fine). Cover the bowl with cling film and let rise at room temperature for 12 hours.
  • Morning – shaping Preheat the oven together with the glass baking dish with lid to 250 °C. Turn the dough out onto a lightly oiled surface (do not dust with flour), fold it over onto itself a few times with a spatula and shape into a loaf. Let stand while the oven finishes heating.
  • Baking in the dish Carefully remove the hot dish, place the loaf inside (you can use parchment paper for easier handling), you may score the surface with a razor blade and sprinkle with seeds. Cover and bake for 30 minutes at 250 °C.
  • Finishing without the lid Remove the lid, lower the temperature to 180 °C and finish baking for about 15 minutes so the crust turns nicely golden.
  • Cooling Remove the bread from the dish and let cool on a wire rack so the crust stays crispy.

Total preparation time

  • Preparation (active): 5–10 minut

  • Cooling (inactive): 30 minut
