Preparation procedure

  • Sift the flour, add the sugar, salt, eggs, sour cream, and grated lemon zest. Into the lukewarm milk put 1 tbsp sugar, 2 tablespoons flour and crumble the yeast. Let the starter rise. Add the risen starter to the flour along with the melted butter.
  • Work the dough by hand until smooth; it will be sticky, don't be afraid—just flour your hand. Mix for at least 10 minutes, then put it in a warm place to rise.
  • Meanwhile prepare the fillings: grate the apples and mix with sugar and cinnamon. For the walnut filling, pour hot milk over the ground walnuts and add sugar. Do the same for the poppy-seed filling.
  • Transfer the dough to a floured work surface and divide it into 8 loaves. Then divide each into smaller loaves, from which form 3–4 small rolls.
  • Roll each loaf into a circle. Using a cutter or knife, make cuts in the top half of the dough. Place the filling on the bottom half. Use a spoon to remove excess juice from the apples so it doesn't run during baking.
  • Roll them up and transfer to a baking sheet lined with parchment paper.
  • Beat the yolks with the milk and brush the rolls. Preheat the oven to 190°C and bake for 20–25 minutes until golden.

For measuring ingredients we use a cup with a volume of 200 ml.

Excellent recipe that’s definitely worth trying. The rolls are very soft and fluffy, and if you have leftover apples at home, this is certainly the best way to use them.  They are also great with jam, poppy-seed or walnut filling.
