Quick curd mug cake with a cocoa sponge, vanilla curd cream and chocolate glaze. An easy recipe that's ready in no time and tastes great to the whole family.

A quick, moist and fluffy curd cake that you can make with a few ingredients measured in cups. Two types of batter create an impressive marble, in the middle awaits a delicate vanilla-curd cream and on top a light chocolate-cream glaze. An ideal dessert with coffee and for family celebrations.

Preparation procedure

  • Batter – base: Whisk the eggs with the sugar and vanilla sugar until frothy. Pour in the oil and milk, briefly whisk. Fold in the sifted flour with the baking powder to a smooth batter and divide into two halves.
  • Batter – flavoring: Stir cocoa and Granka into one half, leave the other light.
  • Baking the base: Line a smaller baking tray (approx. 20 × 30 cm) with baking paper. Pour in the light batter, level it and evenly pour the cocoa batter on top. Bake in an oven preheated to 180 °C for about 20 minutes (a skewer should come out dry). Let cool completely.
  • Cream: From the milk, sugar and pudding powders cook a thick pudding. Stir the butter into the hot pudding and mix until melted. Let cool to lukewarm and then beat in the curd and, to taste, a few drops of rum. Spread the cream over the cooled base.
  • Glaze: Melt the chocolate in a water bath, remove from the heat and stir in the cold sour cream until smooth. Pour over the cream and smooth.
  • Chilling: Chill the cake for at least 2 hours, ideally overnight, so the cream and glaze firm up nicely. Then cut into slices.

Note on measures: 1 cup = 250 ml

Tips:

  • If you want a more pronounced marble, spoon the batters alternately by tablespoons and lightly swirl them with a skewer.

  • You can stir grated lemon zest into the cream for freshness.

  • You can also decorate the glaze with stripes of white sour cream and create a pattern with a skewer.
