The combination of a fragile meringue base and chocolate cream creates a flavor combination that will pleasantly surprise every lover of sweets. They are a great treat with coffee, for family gatherings, and for festive occasions.

Preparation procedure

  • Mix the egg whites with the sugar and place over a water bath. Heat for approximately 10 minutes to about 75 °C, until the sugar dissolves and a fine foam forms. Transfer to a stand mixer and whip into a stiff, dense meringue (about 12 minutes).
  • Transfer the meringue into a piping bag fitted with a decorative tip and pipe waves onto a baking sheet lined with parchment paper. Dry in the oven at 100 °C for about 1.5 hours (after a while you can lower the temperature to 80 °C).
  • For the cream, whisk the yolks with the sugar over a double boiler until thick and foamy. Add the milk and cocoa, let cool, then beat with softened butter into a smooth cream.
  • Transfer the cream into a piping bag fitted with a decorative tip and pipe onto the cooled meringue waves. Top with a second wave and press gently.
