- Preparation of the butter and lard: Place the butter and lard in the freezer for 1.5 hours.
- Dough processing: After the time has passed, cut them into smaller pieces and mix with the flour to form fine crumbs.
- Mixing with the liquid ingredients: In a bowl, mix the sour cream, milk, egg yolks, and lemon juice. Add this mixture to the dough and knead well until a firm dough forms.
- Resting the dough: Wrap the dough in plastic wrap and place it in the refrigerator to rest for 1 hour.
- Shaping the croissants: After resting, take the dough out of the refrigerator and divide it into 6 pieces. Roll each piece into a disk and cut it into several segments. Place a small amount of your chosen filling on each segment using a teaspoon. Wrap the pieces of dough and shape them into small croissants.
- Baking: Place the prepared croissants on a baking sheet lined with parchment paper. Put into a preheated oven and bake at 180 °C for about 18 minutes.
- Finishing: After removing from the oven, let the croissants cool slightly and then dust with powdered sugar.
