- Mix the citric acid with a quarter cup of cold water.
In another cup dissolve the natural rennet similarly in the same amount of cold water as the citric acid.
Heat the milk and when it is warm, gently stir in the prepared citric acid mixture. Stir constantly and use a thermometer to keep the milk temperature at 31 degrees Celsius. - Here the magic begins – the milk curdles.
- This happens when you add the prepared vegetable rennet mixture to the milk. Continue stirring until a temperature of 40 degrees Celsius is reached.
- Then turn off the burner, cover the pot with a lid and let it rest for at least 5 minutes.
- In a second pot bring the water up to 87 degrees Celsius.
- In the pot where the milk mixture rested, the curd-like part should slowly separate from the whey (the yellow liquid).
- If it doesn't look like this, let the mixture rest until it does.
- Then pick out the lumps and place them in a colander.
- Then immerse them in a pot of nearly boiling water and let cook for about 5 min.
- Stir occasionally and make sure the internal temperature of the cheese is around 57 degrees Celsius.
- Remove the lumps, gently salt them, and work them like dough until cheese forms.
- Shape into the desired forms.
- Mix the citric acid with a quarter cup of cold water.
