Preparation procedure

  • We wash the zucchini and peel it thoroughly
  • If it has any seeds, we carefully remove them
  • We cut the zucchini into small rounds, similar to when we slice potatoes
  • We pour oil into the pan and heat it to medium
  • In the hot oil we fry the zucchini so that it is lightly golden, but we must not overdo it so the inside of the zucchini doesn't become mushy
  • We wash the parsley and chop it finely
  • We grate the garlic cloves
  • We blend the walnuts, or crush them finely with a knife
  • In a bowl we finally mix the parsley, garlic, walnuts, salt, pepper and a little olive oil
  • Then we add the mixture to the zucchini, mix thoroughly and serve
