Preparation procedure

  • Dough preparation In a bowl, mix the all-purpose flour with the baking powder. Pour in 150 g of oil and 170 ml of lukewarm water and quickly work into a smooth, non-sticky dough. Cover with plastic wrap and let rest for 15–20 minutes.
  • Shaping the cookies On a floured surface, roll the dough out to a thickness of approx. 3–4 mm. Using a knife or pastry wheel, cut into equally sized squares (approx. 5 × 5 cm). Lightly press the center of each square (fist, end of a wooden spoon) so that during frying the cookies bend more into the typical shape.
  • Frying In a deeper pan or pot, heat 200 ml of oil to medium-high temperature (approx. 170–180 °C). Fry the cookies two to three at a time until they turn golden and float to the surface, about 1–2 minutes on each side. Let the finished cookies drain on paper towels.
  • Preparing the sugar syrup In a medium saucepan, mix 200 g of sugar with 100 ml of water and 10 ml of lemon juice. Heat over low heat, let the sugar dissolve and simmer the mixture briefly until the syrup slightly thickens (approx. 3–4 minutes). Do not cook too long so the syrup remains runny.
  • Coating the cookies in syrup While still warm, quickly place the cookies into the sugar syrup and stir them several times so they are evenly coated. Then remove them back onto a paper towel or rack to let excess syrup drip off.
