Forget about dry store-bought buns – this recipe will show you how to easily make at home soft, fragrant and perfectly moist quark buns that taste like grandma’s. The tender dough, rich quark filling and golden surface make them a dessert that disappears from the tray before it has a chance to cool.

Preparation procedure

  • Preparing the starter: In half of the lukewarm milk, dissolve the sugar and yeast. Let the starter rise for about 10 minutes, until it begins to foam.
  • Dough: On a floured work surface, combine the flour, egg yolk, a pinch of salt, melted butter and the starter. Knead into a smooth, elastic dough that does not stick. Cover it with a clean cloth and let it rise in a warm place for about 45–60 minutes, until it doubles in volume.
  • Quark filling: In a bowl, mix the quark, raisins, sugar, vanilla sugar and egg yolks. Stir until a smooth and thick mixture forms.
  • Shaping the buns: Roll out the risen dough into a sheet about 0.5 cm thick and cut out circles using a glass. Place a teaspoon of filling on half of the circles, cover with another circle and seal the edges well so the filling doesn't leak.
  • Baking: Transfer the buns to a baking sheet lined with parchment paper. Bake in an oven preheated to 210 °C for 10 minutes, then reduce the temperature to 180 °C and bake for another 20 minutes, until the buns are golden.
  • Finishing: Let the baked buns cool briefly, then dust them with powdered sugar. Serve warm or lukewarm – that's when they taste best.
