  • Prepare the shells Roll out the puff pastry and cut it in half. From each half cut a circle about 20 cm in diameter and a smaller central hole of about 7.5 cm to create a "wreath". Prick the circles several times with a fork, brush with water and sprinkle with sugar. Transfer to a baking tray lined with baking paper.
  • Baking Bake in an oven preheated to 180 °C for about 15 minutes until golden and crisp. Let cool.
  • Cook the cream base In a saucepan whisk the eggs with the sugar, add the starch and gradually the milk. Stir in the vanilla extract and cook over low heat, stirring constantly, until thickened.
