- Preparing the dough: Mix the plain yogurt with the baking soda and let it sit for a few minutes. In another bowl, mix the flour with the salt and add the yogurt mixture. Work into a smooth, elastic dough. Cover the dough with a cloth and let it rest for 10 minutes.
- Preparing the filling: Mix the mascarpone with the chopped herbs and add salt to taste. Mix everything well.
- Shaping the flatbreads: Divide the dough into six equal pieces. Shape each into a flatbread about 10 cm in diameter. Put two tablespoons of filling on each flatbread. Close the flatbread like a little pouch and roll out again into a circle.
- Cooking the flatbreads: Cook the flatbreads in a dry pan on both sides for approximately 3 minutes, until golden. Stack the cooked flatbreads and brush each with melted butter.
