Beat the egg whites with the sugar until stiff peaks form. Then stir in the water, flour, and cocoa. Slowly combine everything.
Grease a baking tray measuring 32×20 cm with butter and dust with flour. Pour the batter onto it and bake in a preheated oven at 180 °C for 15 minutes.
After baking, let it cool and then cut the baked layer lengthwise into two parts.
- Yellow cream: Cook the pudding according to the instructions, but without adding sugar. Stir the egg yolks into the hot pudding and then add the sugar. Stir the mixture over low heat until the sugar dissolves. Then remove from heat and cover with plastic wrap. Once the cream has cooled, add the softened butter and mix well.
- White cream: Whip the egg whites into stiff peaks and gradually add the powdered sugar. Mix the lemon juice with the granulated sugar and cook until it reaches the thread stage. Stir this sugar syrup into the whipped egg whites.
- Assembling the dessert: Spread a layer of the egg-white cream onto the bottom part of the cocoa layer. Then add a thick layer of the yellow pudding cream and let it cool for a while. On top of the pudding layer, add the remaining egg-white cream and cover with the second part of the cake. Drizzle the dessert with the melted chocolate, which you prepared earlier in a water bath, and smooth the surface.
