The dewy quark cake is among traditional recipes passed down through generations. After baking, fine golden droplets form on the meringue layer, and it is precisely because of them that the cake got its name. This recipe is a great choice for those who love moist, creamy desserts with authentic quark flavor. The cake is ideal for weekend baking, family celebrations and the festive table.

Preparation procedure

  • From all the ingredients for the dough we knead a smooth dough and press it evenly onto the bottom of a baking tray lined with baking paper or greased and sprinkled with breadcrumbs. In a bowl we whip the eggs, yolks, sugar and vanilla sugar. Gradually we add the smooth quark, oil, milk and pudding powder. A smooth and creamy mixture forms, which we spread evenly over the dough on the tray.
  • Put the cake into an oven preheated to 180 °C and bake for 40 to 45 minutes. Just before it's fully baked, whisk the egg whites into a stiff meringue and gradually add the sugar until it dissolves. After the baking time has elapsed, remove the cake, spread the meringue layer, smooth the surface and put it back to bake for about 10 minutes at 170 °C. The meringue should only lighten in color; it should not brown.
  • Remove the cake, let it cool rapidly in a cold place and then place it in the refrigerator, ideally overnight, so that it sets perfectly and the golden droplets form.

Total preparation time: approx 2 hours (20 min preparation + 55 min baking + cooling)
