Preparation procedure

  • Preparing the dough: Pour the flour, baking powder, sugar and vanilla sugar into a bowl, add the butter and yolks. Work into a smooth dough. Use it to line the bottom of a greased and floured baking pan (or use parchment paper).
  • Quark cream: Beat the eggs, yolks, sugar and vanilla sugar until smooth. Add the quark, then the oil, milk and pudding powder. Mix everything thoroughly until a smooth mixture forms. Spread it evenly over the prepared dough.
  • Baking: Bake in an oven preheated to 180 °C for about 40–45 minutes. The edges should turn golden.
  • Meringue layer: About 10 minutes before the end of baking, whisk the egg whites into stiff peaks, gradually beating in the sugar. Spread the meringue over the hot cake from the oven, smooth it and create a pattern with a fork. Return to the oven and finish baking at 170 °C for another 10 minutes.
  • Cooling: Let the cake cool quickly. Once it has cooled, place it in the refrigerator for several hours (ideally overnight). Meanwhile, typical golden "dewdrops" will form on the surface of the meringue.
