Preparation procedure
- Dough preparation: In a bowl, mix the egg, sugar and salt. Whisk the yolk and the white until a light foam forms.
- Kefir: Heat the kefir to 35–40 °C and pour it into the egg mixture. Mix everything well.
- Flour: Gradually add the flour and whisk until a smooth batter forms. It should have the consistency of thick cream. If the batter is too thin, add more flour.
- Baking soda and vinegar: Mix the soda with the vinegar and add to the batter. Stir immediately. After a few minutes the batter will lose density, so let it rest for about 10 minutes to gain volume.
- Frying: Pour about 1 cm of oil into the pan and heat it. Using a spoon, form round patties from the batter. As soon as small holes appear on the surface, flip the fritters to the other side and fry until they turn golden.
- Finishing: Fry for about 1–2 minutes on each side, then serve the fritters.
