- Preparing the mixture: Put the bryndza, butter, chives and crushed garlic into a blender. Blend everything into a smooth and homogeneous mixture. Salt and pepper to taste.
- Chilling in the fridge: Put the finished mixture in the fridge to firm up for about 1 hour so the flavors meld and the mixture is easy to shape.
- Preparing the coatings: Meanwhile, crumble the slices of rye bread into crumbs onto one plate and finely chop the parsley (or dill) onto a second plate.
- Shaping the balls: Take the set bryndza mixture out of the fridge and shape it into balls of the size you prefer.
- Coating: Coat each ball either in the bread crumbs or in the chopped parsley (or dill), according to your taste.
- Final chilling: Return the finished balls to the fridge for another 30 minutes to firm up well.
