These fluffy yeasted pastries with a double filling delight – a delicate quark cream and homemade plum jam – belong to the tried-and-true classics of Czech home baking. Thanks to the double rising and the delicate crumb topping, they are a perfect treat for afternoon coffee and a stylish dessert for guests.

Preparation procedure

  • Preparing the yeast starter In a mug, mix 50 ml lukewarm milk with the yeast, a teaspoon of sugar and a tablespoon of plain flour. Leave the starter to rise for 10 minutes in a warm place.
  • Kneading the dough In a bowl, mix both types of flour with the salt and the remaining sugar. Pour in the starter, the rest of the milk, the oil and the yolks. Work into a smooth, non-sticky dough (5–7 minutes with a mixer or by hand). Cover with a cloth and let rise for 60 minutes.
  • Preparing the quark filling In a bowl, beat the quark with the sugar, lemon zest and rum into a smooth cream.
  • Shaping the pastries Divide the risen dough into 12–15 equal buns. Let them rest under cling film for 10 minutes. Roll each bun into a patty, place a tablespoon of the quark filling and a tablespoon of plum jam in the center. Fold the edges down – seam side down – and flatten into the shape of a pastry.
  • Second rising Place the pastries on a baking sheet lined with baking paper, cover and let rise for 30 minutes.
  • Brushing, topping and baking Preheat the oven to 170 °C. Brush the pastries with the beaten egg, sprinkle with the crumb topping and bake for 25 minutes until golden.
  • Finishing Transfer the hot pastries to a rack, drizzle with melted butter mixed with rum and let cool.
