This one-pan coconut cake is among the recipes you’ll fall in love with on the first try. Everything bakes at once, without complicated layering and without long preparation. The base is a simple cocoa sponge and a delicate coconut filling that merges beautifully with the batter during baking. The recipe is ideal for beginners, not demanding on ingredients and very inexpensive.

Preparation procedure

  • Preparing the batter In a bowl, whisk the eggs with the granulated and vanilla sugar until pale and foamy. Add the oil and milk and mix briefly. Gradually fold in the flour combined with the baking powder and cocoa. You will get a smooth, slightly thinner batter.
  • Coconut filling Pour the milk into a saucepan, add the sugar, flour and shredded coconut. Stirring constantly, bring to a boil and cook briefly until the mixture thickens. The filling should have the consistency of a thicker pudding.
  • Assembling the cake Line a baking tray (approx. 30 × 20 cm) with parchment paper or grease and flour it. Pour in half of the cocoa batter, spread the coconut filling evenly over it and cover with the remaining batter.
  • Baking Preheat the oven to 180 °C. Bake the cake for approximately 30–35 minutes until golden. Do a skewer test – when inserted it should come out dry.
  • Serving After cooling, cut the cake into slices. If desired, you can dust the surface with powdered sugar or pour over chocolate glaze.
