  • Preparing the schnitzels Salt and pepper the meat slices. Coat first in breadcrumbs, then in the beaten eggs with garlic. Heat oil in a pan and quickly sear the schnitzels on both sides until golden (just enough to brown, do not cook through). Transfer them to a deeper baking dish and sprinkle with finely chopped onion.
  • Mustard sauce In a saucepan melt the butter, add the oil, mustard, ketchup and garlic. Stir, pour in the stock/water, and season with vegetable seasoning if desired. Heat briefly and mix until smooth.
  • Baking in the oven Pour the sauce evenly over the schnitzels in the baking dish and cover (with a lid/foil). Bake in a preheated oven at 220 °C for about 45 minutes. Remove the lid/foil and bake for another 10–15 minutes so the surface lightly browns and the sauce reduces.
  • Serving Serve with boiled potatoes, mashed potatoes, rice or fries. A simple cucumber salad is also excellent.

Tip: If you want a stronger sauce, stir in a teaspoon of Dijon mustard at the end. For a milder version you can stir in a tablespoon of cream after baking.
