Vanilla cream is the base of many delicious desserts. This recipe is simple, contains no flour and is a great choice not only for cakes but also for pastries or dessert cups. Moreover, the cream keeps for up to 3 days in the refrigerator, which makes it a practical helper for preparing sweet treats in advance.

Preparation procedure

  • Preparation of ingredients: Let all ingredients come to room temperature so they are easy to work with.
  • Base mixture: Separate the yolks from the whites and mix them with the sugar and vanilla extract in a large bowl. Pour in the milk and mix well until a smooth mixture forms.
  • Cooking: Heat the mixture over low heat and stir continuously until it thickens. Be careful, the cream must not boil to prevent the eggs from curdling.
  • Cooling: Once the mixture is thick, remove it from the heat and let it cool to room temperature.
  • Finishing: Stir the softened butter into the cooled mixture. Whip the egg whites until stiff peaks form and gradually fold them into the cream. Finally whip until smooth so the cream acquires a light and fluffy consistency.
  • Use and storage: The cream can be used immediately in cakes, pastries or other desserts. Store in a closed container in the refrigerator, where it will keep for up to 3 days.

Tips:

  • If you want the cream extra smooth, use a hand mixer or whisk for the final whipping.
  • For a stronger flavor add a little grated lemon zest to the mixture.
