Preparation procedure

  • Preparation of ingredients Thoroughly wash the tomatoes, peppers and cucumbers. Remove the green stem from the tomatoes, cut the vegetables into cubes or coarser strips. Peel the onion and slice into half-moons. Chop the garlic finely. Rinse and chop the herbs.
  • Mixing the vegetables In a large bowl, mix the chopped vegetables with the herbs. Add salt and oil, mix thoroughly and let stand for 30 min so the vegetables release their juices.
  • Sterilizing the jars Boil the jars and lids or sterilize them in the oven at 100 °C for 10 min. Store in a clean place.
  • Filling the jars Firmly pack the salad into each one-liter jar so that no large air bubbles remain. Fill the jar halfway with the juice from the bowl. Add 1 teaspoon of sugar and 1 teaspoon of vinegar. Close the jars tightly.
  • Canning Place a cloth on the bottom of a large pot, set the jars on it, pour water to half their height. Cover with a lid and sterilize for 35–40 min from the start of boiling.
  • Cooling and storage Turn the hot jars upside down and let them cool slowly under a blanket (at least 12 h). Store in a cool, dark place.
