Preparation procedure

  • White dough: mix the sifted flours with the sugar and baking powder. Add the egg and butter and quickly work into a smooth dough. Wrap in cling film and put in the refrigerator.
  • Nut dough: separate the egg whites from the yolks. Whip the egg whites with a pinch of salt to stiff peaks. Beat the butter with the sugar, add the yolks, ground nuts, breadcrumbs, cocoa and finally the grated apples. Gently fold in the beaten egg whites.
  • Roll out the white base between two sheets of paper to the size of a 30×40 cm baking tray. Grease and dust the tray, transfer the dough and spread with jam.
  • Spread the nut dough over the jam and bake at 180 °C for about 25 minutes.
  • Glaze: melt the chocolate with the oil in a double boiler and pour over the still-warm cake. Let set and then chill.
