This excellent grated apple cake is an ideal dessert for the autumn and winter seasons, when apples are on hand everywhere. The combination of delicate cocoa dough, sweet apple filling and airy egg white meringue creates an irresistible dessert that you will love.

Preparation procedure
- Preparing the dough: Cut the softened butter into a bowl, add the sifted flour with baking powder and powdered sugar. Add the egg yolks and cocoa (if you want a cocoa dough). Work the dough into a smooth dough with your hands. Although the dough may first seem crumbly, the butter will melt during kneading and the dough will come together. Set aside the smaller half of the dough in the refrigerator to firm up.
- Preparing the cake: Grease the baking tray with butter and roll out the dough or evenly press it with your hands. Spread the jam of your choice over the dough. Add the grated or sliced apples on top of the jam and drizzle them with lemon juice. Season with cinnamon or vanilla sugar.
- Preparing the meringue: Whisk the egg whites with sugar until stiff peaks form and spread it over the layer of apples.
- Finishing: Grate the reserved dough from the refrigerator over the meringue layer. If you prefer, you can roll out the dough and cut it into strips, then arrange them in a lattice on the cake. Bake in an oven preheated to 180 °C for about 40 minutes, until the surface is golden.
