Delicate, creamy and it holds its shape beautifully. This is fake tiramisu without eggs that you can make even in a rush. Instead of raw eggs the cream is based on quark and pudding, so it’s stable, light and cuts very well. An ideal ‘in-the-fridge’ dessert for weekends and celebrations.

Preparation procedure

  • Prepare the coffee. Pour hot water over the instant coffee, stir and let cool slightly. For an adult version add rum or amaretto.
  • Make the quark cream. In a bowl whisk together the milk, pudding powders and starch until smooth. In a saucepan over low heat melt the butter with the sugar. Stir in the quark and then, while stirring constantly, pour in the pudding mixture in a thin stream. Cook 3–5 minutes until thickened. Remove from heat and let cool for 10 minutes (the cream should be warm, not hot).
  • Layer the dessert. Line the bottom of the pan with ladyfingers briefly dipped in coffee (don’t soak them long, they will soften). Spread a third of the cream. Repeat: ladyfingers – cream – ladyfingers – cream – ladyfingers. In total 4 layers of ladyfingers and 3 layers of cream, with the cream ending inside.
  • Finish and chill. Generously dust the surface with cocoa. Cover and refrigerate for at least 4 hours, ideally overnight, to cool and set.

Slice with a sharp knife dipped in hot water and wiped dry – the cuts will be smooth and neat. Serve well chilled.

Tips and variations

  • Prefer a stronger coffee flavor? Use some cocoa-flavored ladyfingers and add a teaspoon of instant espresso to the coffee.

  • Lighter version: replace part of the quark (300–400 g) with full-fat Greek yogurt.

  • For a festive touch, dust the first cream layer with cocoa and the second with finely grated chocolate.
