Foolproof yeast doughnuts – as soft as cotton, with a fantastic white stripe and a perfectly moist crumb. Fill with homemade apricot jam or Nutella and they’ll disappear from the bowl in a flash.

Preparation procedure

  • Starter in the well Pour both flours and the baking soda into a large bowl, mix and make a deep well in the center. Pour about 200 ml of lukewarm milk into it, add a teaspoon of sugar, crumble the yeast and mix only in the well. Cover and let it rise for 20 minutes.
  • Mixing the dough Add the remaining sugar, vanilla sugar, egg yolks, melted butter, a pinch of salt and the remaining milk to the bowl. Knead into a smooth, soft dough (by hand 8–10 minutes or with a mixer 6–8 minutes). Cover and let rise for 1 hour in a warm place.
  • Shaping and second proofing Gently stretch the risen dough with your hands (no need to roll) and cut out circles. Make a shallow dent in the center of each with your index finger. Let them finish rising on a floured board for 60–90 minutes.
  • Frying Heat oil in a deep pan or pot to 170–175 °C. Place the doughnuts dent-side down, fry until golden 1.5–2 minutes on each side. Place on paper towels to absorb excess oil.
  • Finishing While still warm, fill the doughnuts with jam or Nutella (using a piping bag through the dent), or dust with powdered sugar.

  • Servings: approx. 28–32 donuts (depending on cutter size)

Tips for perfection

  • You get the white stripe from a long second proofing and placing them dent-side down.

  • The oil must not be overheated – the donuts would brown and remain raw inside.

  • The dough should be soft; if it sticks, just lightly dust with flour.
