Preparation procedure

  • Pudding cream In a saucepan bring 600 ml of milk to a boil together with 4 sachets of vanilla sugar. In the remaining 200 ml of milk, whisk the pudding powders and, stirring constantly, pour them into the hot milk. Cook for 2–3 minutes, until the cream thickens. Remove from heat and let cool.
  • Batter In a bowl, beat the egg yolks with the sugar and vanilla sugar until light and frothy. Gradually beat in the oil, milk and the sifted dry ingredients (flour, baking powder and cocoa). Finally, gently fold in the stiffly beaten egg whites.
  • Forming the craters Spread the batter onto a baking sheet about 30×20 cm lined with baking paper. Using a spoon, place dollops of the pudding cream on the surface of the batter so that there is batter left between them — "craters" will form.
  • Baking Bake in an oven preheated to 180 °C (convection 160 °C) for 30–40 minutes, until the edges of the batter turn lightly golden and the pudding in the craters is set.
  • Cream topping In a bowl, mix the sour cream with the powdered sugar. Spread this mixture evenly over the baked cake and return it to the oven for another 8–10 minutes to slightly "set" the surface.
  • Cooling and serving Let the cake cool completely at room temperature, then cut into squares. For a more festive appearance you can dust the finished pieces with powdered sugar or small pieces of fresh fruit.
