- Bring the salted and filtered water to a boil and maintain a steady boil for 10 minutes.
- Let it cool to room temperature
- Peel the garlic and crush it with the flat side of a knife, crush the whole pepper as well, break the bay leaf and pour everything together with the ground pepper into the cooled salted water and mix thoroughly
- Rinse the fat under water and thoroughly clean the skin.
- Cut into larger pieces.
- Arrange the pieces of fat preferably into a glass container
- Pour with the prepared brine and leave in a cool place for 2-3 days, without covering the container with a lid – the fat must breathe.
- After the fat soaks up the salty brine, take it out of the container, let it dry and sprinkle with spices to taste
- Then wrap it in foil and store in the freezer.
