Preparation procedure

    1. Bring the salted and filtered water to a boil and maintain a steady boil for 10 minutes.
    2. Let it cool to room temperature
    3. Peel the garlic and crush it with the flat side of a knife, crush the whole pepper as well, break the bay leaf and pour everything together with the ground pepper into the cooled salted water and mix thoroughly
    4. Rinse the fat under water and thoroughly clean the skin.
    5. Cut into larger pieces.
    6. Arrange the pieces of fat preferably into a glass container
    7. Pour with the prepared brine and leave in a cool place for 2-3 days, without covering the container with a lid – the fat must breathe.
    8. After the fat soaks up the salty brine, take it out of the container, let it dry and sprinkle with spices to taste
    9. Then wrap it in foil and store in the freezer.
