Although this is a “fake” version, they resemble traditional crackling pagáče in taste and appearance, but are made with a nut filling. The result is light, tender, and beautifully layered.

Preparation procedure

  • Using the listed ingredients, work a semi-soft dough and let it rise for 45 minutes in a warm place. Meanwhile prepare the filling – mix the softened lard with the crushed walnuts. You can salt the filling later when spreading it over the dough.
  • Roll the risen dough into a larger sheet and evenly spread the prepared nut filling. Fold the dough like classic pagáče, adding filling between the layers where needed to achieve pronounced lamination. Let the folded dough rest briefly, only while the oven is preheating to 190 °C.
  • Then roll the dough to a thickness of approximately 2 cm and cut out pagáče with a glass or a cutter. Transfer them to a baking sheet lined with parchment paper, brush with the beaten egg, and place immediately in the oven. Bake for about 20 minutes until golden.
