Preparation procedure

  • Sauté the garlic In a pan, heat the olive oil, add the chopped garlic and sauté over low heat for 30–60 seconds, just until it perfumes the kitchen. Do not let it brown.
  • Add the carrots Add the grated carrots, lightly sauté them for about 4 minutes so they soften but remain juicy. Let them cool completely. Tip: For a bolder flavor you can add an extra raw clove of garlic to the yogurt.
  • Prepare the yogurt base Stir the yogurt with the salt. If it's too thick, loosen it with a little cold water. The result should be a smooth, slightly creamy consistency.
  • Combine all ingredients Fold the cooled carrots, sautéed garlic and walnuts into the yogurt. Mix the salad thoroughly.
  • Serving Before serving, sprinkle with chopped parsley and lightly drizzle with olive oil. Serve chilled.
