Festive cherry slices with cream are among those desserts that enchant not only with their appearance but above all with their exceptional taste. The combination of fluffy batter, juicy fresh cherries and delicate vanilla cream creates a true culinary experience. This recipe can be handled even by a less experienced baker, yet it looks and tastes like it came from a professional.

Preparation procedure

  • Preparing the batter: In a bowl, beat the eggs with the sugar until light and fluffy. Gradually add the milk and oil, never beat for too long so the batter doesn't become heavy. Sift the semi-coarse flour and baking powder into the mixture, gently mix. Divide the batter into two parts. Add the cocoa powder to one and carefully fold it in.
  • Baking: Prepare a rectangular baking tray greased with oil or lined with baking paper. Pour the light batter, level the surface, then slowly pour the dark cocoa batter so that a gentle marble effect forms. Evenly spread the drained fresh cherries over the batter (let them slightly „sink in“ into the batter). Bake in an oven preheated to 180 °C (fan 160 °C) for about 30–35 minutes. Check the finished sponge with a skewer – the skewer should be dry. After removing from the oven, let the sponge cool completely.
  • Preparing the cream: Using 100 ml of milk and the pudding powder, cook a thick pudding according to the package instructions, together with the sugar. Cover the pudding with cling film (to prevent a skin from forming) and let it cool completely. In a second bowl, whip the cream with Smeta Fix until stiff. Carefully fold in the cooled pudding and the vanilla extract.
  • Final assembly: Spread the cream evenly over the cooled sponge and place in the refrigerator for at least 15 minutes. Melt the chocolate in a water bath, let it cool slightly and then whisk the cream into it. Spread the resulting ganache over the set cream and return the slices to the fridge for another 30 minutes.
