This punch slice combines an airy sponge, three-colored batter, fruit syrup, tart jam and the renowned punch glaze. It is suitable as a festive treat with afternoon coffee and for family celebrations.

Preparation procedure

  • Sponge Preheat the oven to 180 °C. Beat the egg whites with the sugar and water until stiff peaks form. Add the yolks and finally fold in the flour mixed with the baking powder. Divide the batter between two baking trays lined with parchment paper and bake for 12–15 min. Let cool.
  • Three-colored batter Cream the yolks with the sugar and butter until fluffy. Add the flour with the baking powder. Fold in the beaten egg whites. Divide into three portions: one uncolored, color the second with cocoa, the third with pink coloring.
  • Assembling the slices Spread half of the jam over the sponge layer. Place the colored layer on top, gently prick with a fork and pour over the syrup mixed with the rum and flavoring. Spread the other half of the jam, cover with the second sponge. Let soak for 30 minutes.
  • Punch glaze Prepare according to the instructions on the package with the punch flavoring. Pour the glaze over the top of the slices and let set for at least 1 h in the fridge. Cut with a wet, long knife into the desired number of pieces.
