Walnut cookies are ideal to prepare in advance – after a few days' resting they are even better.

Filled walnut cookies are among the most classic Czech Christmas cookies, which disappear from the plate first. The tender cocoa dough with ground walnuts and rich chocolate cream form a combination that has worked reliably for generations. This recipe is technically sound, proven and well-balanced in flavor, so you needn’t worry even when baking in larger batches.

Preparation procedure

  • Preparing the dough Sift the plain and coarse flour into a bowl, add the powdered sugar, cocoa, vanilla sugar and ground walnuts. Add the egg and the cold butter grated on a fine grater. Quickly work into a compact dough, wrap it in plastic wrap and refrigerate for 1 hour.
  • Shaping the walnut cookies Press the chilled dough in small pieces into the walnut molds. Lightly level the surface so the halves are even.
  • Baking Arrange the molds on a baking sheet and bake in a preheated oven at 190 °C for about 15 minutes. The cookies should be firm but not dried out. After baking, let them cool completely and carefully unmold them.
  • Chocolate cream Place the eggs, powdered sugar and cocoa into a stainless steel bowl. Set the bowl over a water bath and, whisking constantly, heat until a thick, smooth mixture resembling pudding forms. Let it cool completely. In another bowl, whip the room-temperature butter into a pale foam. Incorporate the cooled cocoa mixture by spoonfuls and whip into a smooth, creamy filling.
  • Filling and assembling Transfer the cream into a piping bag. Fill the halves of the cookies, top with the other half and press gently.
  • Finishing Lightly dust the finished cookies with powdered sugar.

Practical tips

  • Always work the dough quickly so it stays tender

  • You don’t need to grease the molds if they are well seasoned

  • The cream must be completely cooled, otherwise it will curdle

  • The cookies taste best after 2–3 days of resting in a cool place
