This healthy recipe for zucchini patties turns seasonal vegetables into a tasty and light main dish. Thanks to grated zucchini, carrot and potatoes the patties hold together well, while baby semolina gives a delicate texture. Homemade dill sauce with garlic and sour cream is an ideal accompaniment, but if you want a pure fitness version, you can omit the sauce.

Preparation procedure

  • Preparing the basic vegetable mixture Trim the ends of the zucchini, cut it in half and scoop out the seeds. Coarsely grate it. Peel the carrot and potatoes, finely grate them. Salt the zucchini in a colander, mix and let it rest for 15 min to release its water.
  • Draining and mixing in the eggs Squeeze the liquid well out of the zucchini-potato mixture and return it to the bowl. Add the carrot. Stir in the beaten eggs, chopped spring onion and crushed garlic.
  • Thickening and shaping Stir in the semolina, salt and pepper. Let the mixture sit for 15 min to allow the semolina to swell. Form patties about 6–7 cm in diameter from the mixture.
  • Frying and finishing in the oven Heat 2 tablespoons of oil in a pan. Fry the patties 2 minutes on each side until golden. Transfer them to a baking dish and finish in the oven at 150 °C for another 20 min to ensure they are cooked through inside.
  • Preparing the sauce In a small bowl mix the mayonnaise, sour cream, crushed garlic and chopped dill. Stir and season with salt.
  • Serving Serve the patties warm, topped with the sauce, ideally with fresh salad or bread.
