You wouldn’t believe how easy it can be to fry pancakes without a gram of flour. Thanks to the smooth quark and pudding powder they are silky thin, hold their shape and don’t stick. Ideal when you want a quick breakfast or a light dinner with minimal ingredients.

For 1 serving

Ingredients

Filling to taste: poppy seeds, nuts, jam, chocolate cream, quark

Preparation procedure

  • Mix the batter. Put all ingredients in a bowl and whisk until smooth with a whisk or briefly blend with an immersion blender.
  • Let rest briefly. 3–5 minutes is enough for the starch from the pudding to soften and the batter to come together. If it is too thick, add a tablespoon of milk; if thin, add half a tablespoon of pudding powder.
  • Heat the pan. Lightly grease a non-stick pan with oil and heat over medium.
  • Fry the pancakes. Pour a thin layer of batter and quickly spread it across the pan. Fry 1–2 minutes, until the edges set and the bottom turns golden, flip and finish for another 30–60 seconds.
  • Fill and serve. Fill the finished pancakes immediately with your favorite filling, roll or fold.

Total preparation time: 25 minutes (15 minutes preparation + 10 minutes frying)

Servings: 1 (approx. 2 pancakes)

Tip: For a family batch of 8–10 pancakes, quadruple the ingredients.

Why They Work Without Flour

Pudding powder is mostly starch, which replaces flour: when heated the starch molecules swell and the batter holds together nicely. Quark adds protein and tenderness, so the pancakes don’t tear and are pleasantly soft.

Tips and Variations

  • Gluten-free version: Use pudding powder labeled „gluten-free“.

  • Sweet or savory: A teaspoon of vanilla sugar enhances the sweet flavor; for the savory version omit the vanilla and add a pinch of salt and herbs.

  • Temperature control: If they brown too quickly, lower the heat; if they stay pale and stick, slightly increase it.

  • Storage: Store unused batter in the refrigerator until the next day; stir again before frying.

Serving

They are great with quark and wild berries, with a poppy-seed filling and plum jam, or simply with butter and honey. For a savory option try them with spinach and cheese – the batter is neutral and suits both versions.

Conclusion

Flourless quark pancakes are a quick and reliable alternative to the classic: they don’t stick, don’t crack and stay as thin as crêpes. Just a few common ingredients and in no time you have an elegant dessert or a hearty breakfast on the table. Save the recipe – it’s handy for any “pancake” craving.
