Preparation procedure

  • Preparing the pan and oven Preheat the oven to 200 °C. Line a muffin tin with paper liners.
  • Dry mixture In a large bowl sift/stir together both flours, sugar, baking powder, baking soda, salt, ginger and lemon zest.
  • Wet mixture In a smaller bowl whisk the buttermilk with the lemon juice, oil, eggs and vanilla extract.
  • Combining the batter Pour the wet mixture into the dry and gently stir just until combined (do not mix for long, a few lumps are fine). Carefully fold in the blueberries.
  • Filling and baking Fill the liners almost to the top with batter, sprinkle the tops with sugar. Bake 20–25 minutes at 200 °C, or until a skewer comes out clean and the surface is golden.
  • Cooling Let the muffins sit in the pan for 5 minutes, then transfer them to a wire rack and let cool.

Tip: About 5 minutes before they finish baking you can raise the temperature by 10–20 °C for more pronounced “domes”. Conversely, if the tops are browning quickly, reduce the temperature by 10 °C.
