Preparation procedure
- Preparing the batter: In a bowl, whisk the egg yolks with a pinch of salt and the sugar until a light, smooth mixture forms. Pour in the kefir and mix for about 2 minutes so some of the sugar dissolves. Sift the flour with the cocoa and baking powder and add to the mixture. Mix into a smooth batter.
- Baking the cake base: Line the baking pan with parchment paper. Pour the batter into the pan and bake in a preheated oven at 170–180 °C for about 40 minutes. Do not open the oven during the first 30 minutes.
- Preparing the cream: Heat the egg whites and sugar in a double boiler over medium heat (about 60 °C) for approximately 6 minutes, until the sugar dissolves. Whip the egg whites into stiff peaks and gradually add the butter by spoonfuls. Beat until a smooth cream forms. Add vanilla and lemon or orange juice to taste.
- Assembling the cake: Cut the cooled cake base into 3 layers. Place the first layer on a serving plate, spread half of the cream, cover with the second layer and spread the remaining cream. Finally place the third layer and refrigerate the cake for 1.5–2 hours.
- Preparing the glaze: Mix the sugar with the cocoa, add the cream and heat on the stove, stirring constantly. Add the butter and stir until the glaze thickens. Let it cool slightly.
- Finishing: Remove the cake from the pan, pour over the glaze and let it set. Serve and enjoy this sweet treat!
