Preparation procedure

  • Starter (10 min) In a bowl, mix warm milk, yeast, sugar and flour. Let it foam in a warm place for 8–10 minutes.
  • Dough (10 min) In a large bowl put the eggs, sugar, vanilla, melted butter, oil and honey. Pour in the starter, add the salt and about ¾ of the flour. Mix (dough hooks/wooden spoon), adding the flour in portions – work into a smooth, soft, non-sticky dough.
  • First rising (60–75 min) Cover the bowl and let rise in a warm place until doubled.
  • Filling (5 min) Beat the cottage cheese with the eggs and egg white, sugar, vanilla, butter and raisins into a smooth, spreadable mixture.
  • Shaping (20 min) Turn the risen dough out onto a lightly floured surface, divide into 2 pieces. Roll each into a rectangle about 35×45 cm. Spread the cottage cheese filling evenly, roll up from the long side into a roulade and cut into swirls 3–4 cm wide. Transfer them to baking sheets lined with parchment paper (leave space between pieces).
  • Second rising (20–30 min) Loosely cover the swirls and let them rise a bit more. Brush with egg mixed with milk.
  • Baking (25–30 min) Bake in a preheated oven at 180 °C (top/bottom heat) for 25–30 minutes until golden. Optionally rotate the sheet halfway for even coloring.
