Preparation procedure

  • Preparing the yeast starter (15 min) In a small bowl mix 50 ml lukewarm milk, a teaspoon of sugar and crumble the yeast. Let stand in a warm place until the starter begins to foam (approx. 10–15 min).
  • Mixing the dough (10 min) Sieve the flour into a large bowl, add the egg yolks, melted butter, rum, lemon zest and a pinch of salt. Pour in the risen starter and the remaining milk. Work into a smooth, non-sticky dough.
  • First rise (60 min) Cover the bowl with a cloth and let rise in a warm place until the dough has doubled in volume.
  • Shaping the doughnuts (10 min) Roll the risen dough on a floured surface to a thickness of 2 cm. Cut out circles (7–8 cm diameter) and make a dent in the centre of each with your finger.
  • Second rise (20 min) Place the doughnuts on a clean cloth, cover and let rise for another 15–20 min.
  • Frying (10 min) Heat oil in a deep pan (about 170 °C). Fry the doughnuts first with the side with the dent facing down until golden, then turn them and fry the other side. Let the finished ones drain on paper towels.
  • Egg-white meringue (5 min) Whisk the egg whites and powdered sugar into stiff peaks.
  • Finishing Put a spoonful of plum jam into each dent in the doughnut and top with a layer of egg-white meringue.
