Preparation procedure

  • Preparation of the starter and dough In a small bowl, mix 250 ml lukewarm milk, the yeast, and 100 g sugar. Let the starter rise for 10 minutes. Sift the flour into a large bowl, add the starter, melted butter, the egg, the yolks, salt, vanilla sugar, lemon juice, and zest. Knead into a smooth dough (5–7 minutes). Cover with a cloth and let rise for 1.5 hours in a warm place.
  • Preparing the vanilla cream In a saucepan, mix 300 ml milk, powdered sugar, the starch, the yolks, and vanilla sugar. Whisk over low heat until thickened. Remove from the heat, stir in the butter and lemon juice, and let cool completely (min. 30 minutes).
  • Shaping the rolls Divide the risen dough into 15–20 pieces, roll each into an oval. Spread a tablespoon of vanilla cream on the lower third of each piece. Make two small cuts at the wider end and roll into a crescent shape.
  • Baking Preheat the oven to 180 °C. Place the rolls on a baking sheet lined with parchment paper, brush with the beaten yolk. Bake for 12–15 minutes until golden.
  • Finishing Once cooled, dust with powdered sugar. Serve fresh.
