Preparation procedure

  • Preparing the pudding (20 min): Heat 500 ml milk with the lemon zest in a saucepan. In a bowl, mix the sugar, vanilla sugar, cornstarch, a pinch of salt and 1 egg. (Note: the remaining 4 eggs will go into the dough.) Stir one third of the warm milk into the dry mixture, then return everything to the saucepan. Cook over low heat, stirring constantly, until the pudding thickens. Remove from the heat, discard the zest, let cool for 10 minutes and meanwhile stir in the mascarpone.
  • Choux pastry (15 min): In a small saucepan bring the water, milk, oil and butter to a boil, add a pinch of salt. Once the butter has melted, add the flour and stir for 1–2 minutes until a compact ball forms. Let cool for 5 minutes, then gradually beat in the eggs one by one until a shiny, elastic dough forms.
  • Shaping and baking (25 min): Preheat the oven to 200 °C. Transfer the dough to a piping bag fitted with a decorating tip. Pipe small squares (about 5 × 5 cm) onto a baking sheet lined with parchment paper. Bake in the preheated oven for 20–25 minutes until the dough is golden and a hollow cavity has formed inside.
  • Filling and finishing (10 min + chilling): Slice the cooled shells lengthwise. Fill the bottom halves with the mascarpone pudding and place the top halves back on. Dust with powdered sugar before serving. We recommend chilling for at least 30 minutes to let the flavors meld.
