Potatoes are a great source of energy and, with proper preparation, can be included in a healthy diet. Instead of classic frying, make these tasty and crispy potato patties, which we bake in the oven with minimal fat. This recipe is simple, quick and ideal for a lighter lunch or dinner.

- Preparing the potatoes: Grate the potatoes finely and pour over with ice‑cold water. Stir and let stand for 10 minutes. This removes excess starch, which ensures the patties will be nicely crispy after baking. Then drain the water and squeeze the potatoes thoroughly so no water remains in them.
- Mixing the ingredients: To the grated and squeezed potatoes add the melted butter, grated cheese, chopped chives, eggs, garlic, oregano, salt and pepper. Mix everything thoroughly so the ingredients combine.
- Shaping the patties: From the prepared mixture form oval patties and place them on a baking tray lined with parchment paper.
- Baking: Bake the patties in an oven preheated to 200 °C for 20 minutes, until they are golden and crispy.
- Serving: Serve the finished potato patties with vegetables and a refreshing Greek yogurt dressing, which you make by mixing yogurt with a few drops of lemon juice, a pinch of salt and herbs to taste.
