Preparation procedure

  • Preparation of the dough Preheat the oven to 180 °C. Divide the puff pastry into two portions and roll out to the size of the baking sheet (approx. 36 × 24 cm). Transfer to a baking sheet, prick with a fork to prevent it from puffing up, and bake until golden.
  • Preparation of the caramel topping Dissolve the instant coffee in warm milk. Combine it with the sugar in a saucepan and cook over low heat for about 8–10 minutes until caramel forms. Remove from heat, add the butter and stir thoroughly. Spread the topping over one baked sheet of pastry and cut into smaller squares.
  • Preparation of the vanilla custard Beat the egg yolks with half of the sugar, add the flour, vanilla seeds and 200 ml of milk. Heat the remaining milk (700 ml) and whisk in the prepared mixture. Cook until thickened. Prepare the gelatin in 100 ml of milk according to the instructions. Whisk the egg whites with the remaining sugar to stiff peaks and gently fold into the warm custard. Spread the custard over the baked pastry and smooth.
  • Whipped cream layer Whip the cream with the powdered sugar and stabilizer until firm peaks. Spread it evenly over the cooled vanilla custard.
  • Finishing Place the second sheet of pastry with the caramel topping on top. Chill in the refrigerator for at least 3 hours to set. Cut into neat slices and serve.
