Preparation procedure

  • Dough preparation: Prepare a baking tray sized 36 x 24 cm. Divide the puff pastry in half and roll each piece out to the desired size. Bake both pastry sheets in a preheated oven at 180 °C until golden. Don't forget to prick the pastry with a fork so it doesn't puff up during baking.
  • Glaze preparation: Add the instant coffee and warm milk to a saucepan, mix to dissolve the coffee. Then add the sugar and simmer over low heat, stirring constantly, for about 8–10 minutes until the mixture thickens and turns into caramel. Remove from the heat, add the butter and mix well so everything comes together into a smooth caramel mass. Spread over one baked sheet of pastry and let cool.
  • Vanilla cream preparation: Separate the yolks and whites. Beat the yolks with 150 g of sugar, add the flour, the vanilla pod and 200 ml of milk. Mix thoroughly to avoid lumps. Bring the remaining 700 ml of milk to a boil and add the blended yolk mixture. Cook over low heat until it thickens to a pudding-like consistency.
  • Gelatin preparation: Prepare the gelatin according to the instructions in 100 ml of milk and then fold it into the beaten egg whites with 150 g of sugar. Fold this mixture into the hot yolk mixture and mix thoroughly.
  • Assembling the layers: Spread the warm vanilla cream over one baked sheet of puff pastry and smooth it well. Let it cool completely.
  • Whipped cream layer: Whip the cream with the stabilizer and powdered sugar to stiff peaks. Spread it over the cooled vanilla cream and gently smooth.
  • Finishing: Place the second sheet of pastry, which you previously covered with the caramel glaze, on top. Let the dessert set in the refrigerator and cut into neat slices.
