Preparation procedure

  • Sponge base Preheat the oven to 200 °C. Line a baking sheet with parchment paper (you can lightly drizzle with oil). Whisk the eggs with the sugar and vanilla sugar until very light and fluffy (4–6 minutes). In another bowl, mix the flour, baking powder and salt. Gently fold the dry mixture into the egg foam with a spatula. Spread the batter onto the sheet and bake for about 10 minutes, until a skewer comes out dry.
  • Filling Mix the quark with the sugar and vanilla sugar. Whip the cream until stiff and gently fold it into the quark.
  • Assembly Remove the cooled base from the sheet and slice it lengthwise into two equally sized layers. Spread about 2/3 of the filling evenly on the bottom layer, place the second layer on top and spread the remaining filling over the surface.
  • To finish Level the edges, lightly dust the surface with cocoa. Refrigerate for 30–45 minutes, then cut into slices.

Tip: For an even fresher taste add grated lemon zest to the filling or a couple of tablespoons of apricot purée.
