These Karpaty fruit slices resemble the popular krémeš, but are significantly lighter and fresher. The base is choux pastry, a delicate vanilla pudding cream, airy whipped cream and a fruit layer of fresh fruit. The result is a dessert that’s great for summer, celebrations or with coffee, and that everyone really enjoys.

Preparation procedure

  • Preparing the choux pastry Put the water, salt and butter into a pot and bring to a boil. Once the butter has melted, add the flour and, stirring constantly with a wooden spoon, form a smooth dough that pulls away from the sides of the pot. Remove from heat and let it cool slightly. Then incorporate the eggs into the dough one at a time. Divide the finished dough into two equal parts.
  • Baking the layers Preheat the oven to 200 °C. Spread each portion of dough onto a baking tray lined with parchment paper into a rectangle. Bake each sheet for about 15 minutes, until lightly browned. Let cool completely.
  • Vanilla cream Cook a thick pudding from the milk, sugar and pudding powders. Whisk the butter into the still-warm pudding to create a smooth cream. Spread the cream evenly over the bottom baked sheet of dough.
  • Fruit layer Cut the fruit into smaller pieces, sprinkle with sugar and briefly simmer so it releases its juices. Mix the starch in a small amount of cold water, add it to the fruit and briefly simmer until thickened. Let cool completely and then spread over the vanilla cream.
  • Finishing Whip the cream until stiff and spread it evenly over the fruit layer. Top with the second sheet of dough, press down lightly and refrigerate for at least 1 hour. Before serving, dust with powdered sugar and cut into slices.
