Christmas is here and with it the time to prepare Christmas cookies. If you’re looking for a recipe for gluten-free Linzer cookies that fits the Christmas atmosphere perfectly, this is an ideal choice. Linzer cookies are beloved for their crumbly texture and delicious taste. This recipe with Jizerka flour is not only tasty but also gluten-free, making it a great option for anyone avoiding gluten.

Preparation procedure

  • Dough preparation In a bowl, mix butter, powdered sugar, vanilla sugar, egg and Jizerka flour. Work the dough thoroughly. If the dough is sticky, dust your work surface with flour.
  • Shaping and baking Roll the dough on a work surface into a sheet about 2 mm thick. Use more flour to prevent the dough from sticking. Then cut out various shapes from the dough: circles, stars or hearts. Bake on a baking sheet lined with parchment paper in a preheated oven at 180 °C for about 8–10 minutes, until golden.
  • Assembling and coating After baking, let the cookies cool. Then sandwich the cookies with jam of your choice. Finally, roll them in powdered sugar.

Recommendation

You can let the cookies rest for at least a week in a closed box so the flavors fully meld. If you don’t have time, you can assemble them immediately after baking.
