Preparation procedure

  • Pudding in advance Mix the pudding powders in a portion of the cold milk with both vanilla sugars and the granulated sugar. Bring the remaining milk to a boil, stir in the pudding mixture and cook until thickened. Cover with plastic wrap directly on the surface and let cool to lukewarm (stir occasionally).
  • Dough Whip the soft butter with the sugar and vanilla sugar until light and fluffy. Beat in the eggs. Stir in the flour with the baking powder and briefly combine into a smooth dough. Spread the dough onto a baking sheet lined with parchment paper.
  • Layering the pudding Evenly spread the lukewarm pudding over the dough (it cuts better when not hot).
  • Crumb topping Work the flour, sugar and cold butter with your fingers or a fork into a loose, lumpy crumb. Generously sprinkle it over the entire cake.
  • Baking Bake in a preheated oven at 190 °C fan (or 200 °C top/bottom heat) for 35–40 minutes, until golden. Let cool completely before slicing.

Tips:

• Don’t knead the crumb into a ball – it will remain beautifully crispy.

• Use good-quality vanilla sugar or a pinch of real vanilla.

• For freshness, add a tablespoon of lemon juice to the pudding after cooking.
