This traditional recipe for Grandma’s grilážky belongs among those that deserve an honorable place in every home cookbook. Preparation procedure

  • Preparation of the egg mixture: Beat the eggs with 300 g of sugar until light and frothy. This mixture will later form the base of the cream.
  • Preparation of the caramel: Pour 300 g of sugar into a deeper pan and let it slowly melt over low heat without stirring. Occasionally just gently shake the pan. When the sugar turns amber, add a piece of margarine and let it melt. Then stir in the rest of the margarine and begin mixing so the caramel comes together into a smooth mass.
  • Combining the mixtures: Gradually pour the beaten eggs with sugar into the warm caramel. Keep stirring until the mixture begins to slightly curdle and thicken. Then add the chopped nuts and stir everything for another 5–10 minutes until the ingredients are nicely combined.
  • Forming the layers: Let the mixture cool slightly. Then spread it evenly onto one wafer, cover with the second and press lightly. Place on a flat surface, cover with baking paper and weigh down (e.g., with a cookbook or board). Let set for at least 2 hours.
  • Serving: After setting, cut the grilážky with a sharp knife into rectangles or small squares.
